To make Beefburgers we are going to follow the basic recipe, virtually the same for making Porkburgers, but making suitable alterations to ensure they taste just perfect.
Beefburgers are a staple food which most Westerners and kids of all nationalities love. They are really simple to make, and you can tinker around with the recipe below to make them suit your own palate. In China your main problem will be in sourcing suitable buns, as Chinese ones will contain a ton of extra sugar. We suggest you try using the round flat breads of Xi'an style instead.

One thing we will point out is that onions do play an important role in the final taste. This is very important for Expats in China, where white onions of any kind are extremely difficult to find. The common red onions are either sweet, or very sweet. So are the shallots for that matter - so you may wish to consider adding some garlic if you like a pungent and flavoursome taste. A bit of ginger also works well.

Hamburger buns.
Mixing bowls.
Spoons or spatulas.
Heavy frying pans (Cast iron are best).

Ingredients:
• 1 lb. ground beef (USA for minced beef).
• 2-3 button mushrooms cut into fourths.
• 1-2 minced scallions (USA for spring onions) or one white onion.
• 1 tsp. red wine vinegar.
Method
Step 1
Put minced scallions and chopped mushrooms in bowl.
Step 2
Add red wine vinegar.
Step 3
Add ground beef to bowl.
Step 4
Mix everything together with your hands.
Step 5
Flatten the beef into four patties that are 1/2-inch thick and 5 inches in diameter. Remember that at this stage you can shape them to fit the bread you are intending to use.
Note: 'Patties' is American for 'Burgers'.

Cooking Tips:

Step 6
Set stove-top grill or burner to medium-high.
Step 7
Preheat nonstick frying pan. The pan is at the correct temperature when a drop of water dances on its surface rather than sticking to it.
Step 8
Place patties in the pan and cook for 2 to 3 minutes.
Step 9
Flip patties and cook for another minute, and then add sliced cheese to the tops of patties if desired.
Step 10
Cover pan and allow burgers to cook for a final 2 minutes. Cook 3 to 4 minutes for well-done burgers.
Step 11
Remove hamburgers from pan and place in hamburger buns.
Step 12
Add condiments and toppings such as ketchup, mustard, sliced tomatoes, lettuce, red onions and pickles.
